A 100% gluten free yacht charter in the Galápagos

The Table Is Set: Galapagos 2028

If you eat gluten free, you've spent years being the one who reads the label, calls ahead, and asks the server one more question, even on the trips that were supposed to be your rest. The Table Is Set is an adults only, fully chartered yacht in the Galápagos with 8 guest cabins, one gluten free galley, and every kitchen on the trip is celiac safe. For once, you get to order whatever sounds good and spend your attention on the sea lions instead of the kitchen.

The Trip

Nine days in Quito and the Galápagos,
and the whole table is ours.

We start with two nights at La Casona de la Ronda in Quito's historic district, privately bought out for our group. Then we fly to the islands together and spend six nights aboard the Monserrat, a first class expedition yacht that we've chartered in full.

Because the whole yacht is ours, there is one kitchen on board and it is entirely gluten free. Two naturalist guides sail with us instead of the usual one, so every landing, trail, and snorkel happens in a group of eight or fewer.

Your Host

You're not just booking the Galápagos.
You're traveling with me.

I'm Shannon McEvoy, and I'll be on the yacht with you every day, along with my partner, Rob. I eat gluten free myself, so I know how much better food tastes when you're not running the questions in your head before every meal.

I spent 2008 to 2022 as a luxury resort concierge in Orlando before founding Defying Limits Travel, where we've booked 945+ trips and earned 99+ five star reviews. I talk with every traveler personally before a cabin is confirmed, so the group comes together with care. My job is to have already handled it, so your only job is to show up hungry.

"I’ve never met a more knowledgeable or capable service agent, or one more enthusiastic about ensuring their guests have the best tools at their disposal to make their trip flow smoothly and to ensure the guest has the most memorable experiences. I’ll never forget my first time on the Bourbon Trail—Shannon went above and beyond to make sure I had the time of my life."

Good to Know

Questions travelers ask first.

Do I need to have celiac to join?

You don't need celiac to join. Every guest on this trip eats gluten free for the week, whether that's because of celiac, a gluten intolerance, or simply by choice, and that is a condition of booking for everyone on board. Anything you bring onto the yacht, snacks included, needs to be gluten free too.

How are the kitchens handled?

Every kitchen on this trip, from La Casona to the Monserrat's galley, is verified gluten free before we arrive. We have replaced all the kitchen appliances and utensils (like toasters and cutting boards), and checked all ingredients. Nothing on the boat will have gluten. This is not guessed, it's verified.

Can other food allergies be accommodated?

Food intolerances can be accommodated on this departure. Other food allergies, including alpha-gal, can't be accommodated on this trip. (But we will have other departures that will be able to!)

Is this trip a fit for travelers with mobility needs?

Galápagos landings happen from small boats, and several trails involve climbing, including the wooden stairway at Bartolomé and Prince Philip's Steps on Genovesa. If you have specific mobility questions, message me and we can chat about the trip.

Still Deciding

Not quite ready to hold a cabin?

That's completely fair. A trip like this is a real decision, and it usually involves more than one person's calendar.

Leave your name and email, and I'll send you the full picture to sit with: the day by day itinerary, the cabin layouts, and how the payment schedule works. It's written to be easy to forward to whoever else needs to weigh in.

If February 2028 doesn't work at all, I'll keep you on the list for the next trip I lead.

You'll also receive Concierge Notes, my weekly email, and you can unsubscribe anytime.
