The Table Is Set is a private Galápagos charter for fourteen travelers whose bodies don't tolerate gluten, and every kitchen on this trip, from Quito to the yacht, is handled before you ever arrive. That means you finally get to do what everyone else at the table has always done, which is sit down and enjoy what's in front of you. Somewhere around day three, you'll realize you haven't thought about cross contact once.

The Galápagos is one of the few places left on earth where the wildlife doesn't move out of your way, and you'll see it from a private yacht that belongs to our group alone. There are no strangers at the next table and no shared buffet to navigate, because the boat, the crew, and the galley are ours for the entire sailing.

I built this trip for people who love food and want it at the highest level, not people who have made peace with the plain plate. You'll spend your days on the islands and your evenings around one long table with thirteen other travelers who understand exactly how good it feels to order without explaining yourself.

The whole yacht is ours

This is a full charter of an eight cabin yacht, so the only people on board are our group of fourteen, my partner Rob and me, and the crew who are there to take care of us.

Two unhurried nights in Quito

We start with two nights in Quito so everyone arrives rested and on time, and then we fly to the Galápagos together, which means a late connection can never cost anyone the boat.

Food you'd travel for anyway

Every meal is planned for people who care about what's on the plate, so you'll be eating because it's exceptional, not because it's the one thing you were told was probably okay.

I'm Shannon McEvoy, and I'll be on the yacht with you every day, along with my partner, Rob. I eat gluten free myself, so I know what it's like to run the questions in your head before every meal, and I know how much better food tastes when someone has already asked them for you.

From 2008 to 2022 I worked as a luxury resort concierge in Orlando, which is where I learned that the best trips are the ones where the details disappear before you notice them. Today I'm the founder of Defying Limits Travel, with 945+ trips booked for Defying Limits Travel clients and 99+ five star reviews for Defying Limits Travel, and we were voted a Central Florida Favorite Travel Agency by the Orlando Sentinel in 2025.

My job on this trip is to be the person who has already handled it, so your only job is to show up hungry.

Pricing and how to reserve.

Every cabin on the yacht is double occupancy, and there are seven cabins available for our group of fourteen.

A $1,000 per person nonrefundable deposit reserves your cabin. Travel insurance is required for this trip, and the nonrefundable insurance is due at the time of booking.

Once your deposit is in, I'll set up a one on one call with you so we can talk through your needs together and make sure every part of the trip is aligned with them before we go.
